Beef and Broccoli Rice Keto Recipe

Broccoli is one of the most important ingredients in each keto diet meal plan. This plant is a superb discovery, a gift from Mother Earth, a great helper for our health despite any diet we follow. This vegetable is a source of protein, potassium, calcium, iron, magnesium, and selenium. Also, broccoli is rich in fiber, which is great for any keto diet meal, especially for those who are beginners.

This vegetable has risen in popularity significantly in the past couple of decades, both in Western and Eastern cuisine. Of course, this happens for a couple of good reasons. The great health benefits of broccoli are important, but this vegetable has a special taste compatible with many other foods, especially meat. Today's recipe is a pure example of a healthy and delicious combo of beef and broccoli.

 

BEEF AND BROCCOLI RICE KETO RECIPE

 

The ketogenic diet recipes are always fun and most of them are quite simple for preparation. This recipe can become part of your keto meal plan because it contains everything that is supposed one 'keto-dieter' to take. It is fun because you have the opportunity to see how broccoli can be a great substitution to rice and even other grain products.

 

INGREDIENTS

 

  • 1 lb flank steak thinly sliced against the grain, about 1/4 inch thick
  • 2 tsp cornstarch
  • 2 tbsp low sodium soy sauce
  • 2 tbsp olive oil divided
  • 3 garlic cloves minced
  • 4 cups broccoli rice
  • 2 scallions thinly sliced

 

PREPARATION

 

Prepare a large bowl with soy sauce and cornstarch. Fill the bowl nicely and toss the beef until is evenly coated in the sauce.

 

Heat a large skillet over medium-high heat and add 1 tbsp of oil (you can use olive or regular cooking oil). Once the oil is heat properly add 2/3 of the garlic and after 3-5 minutes of cooking add the broccoli in the skillet together with the cooked garlic.

 

Continue to cook the substance until broccoli becomes soft and tender. Make sure that you must always prevent drying or overheating by adding small amounts of water if needed. 

Once the broccoli is cooked, remove it from the skillet and set it aside. 

 

Add the beef in the skillet together with the remaining garlic and oil. Cook the beef according to your taste and add more soy sauce, salt, or pepper (or your own favorite seasonings) if you want.

 

Place the food in food containers together with the broccoli rice. Bon appetite!
