Being in keto doesn't mean that you should neglect your creative ideas to enrich your holiday dinner table and make it glamorous. If you look in our recent recipes you will find other recipes for shaped cookies, but this one is quite special because is 100% keto-friendly and a perfect replica of the traditional gingerbread cookies.
KETO GINGERBREAD COOKIES RECIPES
The craft of making this cookie is so simple, but someone was creative enough to make a keto version of our favorite Christmas cookies. For our keto enthusiasts, we can say that the gingerbread cookies are a centuries-old tradition dating from 16th century Europe. This dessert simply became a Christmas delicacy because it was very rare and allowed to be made only during the holiday season.
Today all of us can make it, very simple and easy. Of course, those in ketosis have nothing to worry about because this recipe is keto-friendly and low in carbs.
INGREDIENTS
- 2 1/4 cups Blanched Almond Flour
- 1 tbsp Cinnamon
- 1 1/2 tsp Ground ginger
- 1/4 tsp Ground cloves
- 1/4 tsp Nutmeg
- 1/2 tsp gluten-free baking powder
- 1/8 tsp Sea salt
- 1/2 cup Monk Fruit Allulose Blend Sweetener
- 3 tbsp butter (softened)
- 1 large Egg (at room temperature)
- 1 tsp Vanilla extract
HOW TO PREPARE
The first step is to stir together the ground ginger, ground cloves, nutmeg, baking powder, and almond flour. Make sure that everything is combined well.
Use a hand mixer or food processor to blend the fruit sweetener together with butter, egg, and vanilla extract. Add almond flour to this mixture until you have a solid dough. Then, form the dough into a ball and cool it in the fridge for about 30 minutes.
Prepare the baking sheet with parchment paper. Use cookie cutters to cut out pieces of the dough (but first roll the dough nicely to get 1/4'' thick dough) and put them on the parchment paper.
Preheat the oven to 350F and bake the cookies for about 10 to 15 minutes. You will know that they are done when you see their edges turn golden. Cool the cookies and feel free to serve them, they are a truly amazing crowd-pleaser!
