INGREDIENTS
- 1 lb chicken breasts
- 1/2 cup dill pickle juice (from jar) for brining.
- 1 egg, beaten
- 1.5 cups (6 ounces) crushed pork rinds
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1/2 tsp salt
- pinch pepper
HOW TO PREPARE
The first step is to marinade and prepare the chicken meat. In a large ziplock bag add the chops from the chicken breasts (cut small pieces around 1 inch). together with pickle juice. Leave overnight in the fridge ( the least recommended is 1 hour) to marinade.
Use a food processor to pulse the pork rinds. Add the small pork crumbs in a small bowl together with all of the spices. Mix well and put the mixture in a plastic bag.
Unzip the chicken nuggets and add 1 scrambled oil inside the bag. Zip again and shake until you make sure that each piece of chicken meat is nicely coated in the egg. Then, transfer the nuggets in the bag with pork crumbs and spices mixture. Shake well again until all nuggets are coated with the mixture.
Use a baking sheet and bake the nuggets for 20 minutes at 425F. You can serve them with your favorite sugar-free sauces, ketchup, etc.
