FROSTED KETO CHRISTMAS COOKIE RECIPE

For those in keto, you have nothing to worry about. This recipe is completely keto-friendly and you can enjoy the cookies along with your friends and family. This is just another way to show them how great your diet is and how much you enjoy the time spent in the kitchen!

 

 

INGREDIENTS

 

 

  • 1/2 cup granulated erythritol or your sweetener of choice
  • 1/2 cup butter, softened
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups almond flour for low carb or gluten-free all-purpose flour
  • 1/4 cup milk of choice *Add this last- your flour and altitude may not require milk. If your dough is too crumbly, add a little bit of milk!

***FROSTING INGREDIENTS***

  • 6 tbsp butter for frosting
  • 4 cups powdered erythritol for frosting can use powdered sugar if you don't need low carb
  • 1/4 cup coconut milk or milk of choice for frosting
  • 1 tsp almond extract for frosting

 

 

 

HOW TO PREPARE

 

 

In a medium-size bowl mix the butter, granulated erythritol, and eggs, slowly stir the composition by adding baking powder, salt, and flour. Mix all ingredients well and then roll the ‘dough’ nicely. You need to roll out to 1/8’’ to ¼’’ thick. Using parchment paper will make your job a lot easier.

 

Cut pieces in your favorite Christmas shapes (use cutters, they are cheap and you can find them anywhere). Transfer the cookies into a baking pan and bake for about 8-10 minutes at 375F.

 

The next step is combining the frosting. Add 6tbsp butter, almond extract, powdered erythritol, and ¼ cup coconut milk. Mix everything well until you have blended the substance. You can add food dye according to your design. When the baked cookies are cooled, add the frosting and food coloring. Enjoy the cookies, they are ready!
