HOLIDAY KETO PECAN PIE BARS

 

One of the best ways to surprise yourself and your family is to include some 'news' on your holiday menu. Recently we share recipes of great crowdpleasers that are excellent for holiday occasions. The holiday keto pecan pie bars are a recipe full of interesting ingredients such as chocolate and nuts. The bars are healthy and low carb, they are tasty and delicious. Let's check the ingredients.

 

 

INGREDIENTS

 

 

Crust

 

  • 1 1/4 cups almond flour
  • 1/4 cup granular Swerve Sweetener
  • 1/4 tsp salt
  • 1/4 cup butter chilled, cut into small pieces

Pecan Pie Filling

 

  • 1/2 cup butter
  • 2/3 cup powdered Swerve Sweetener
  • 2 tsp Yacon syrup optional, helps with color and flavor
  • 1 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream
  • 2 large eggs
  • 1/4 tsp salt
  • 1 cup pecans lightly toasted
  • 2 ounces dark chocolate chips, sugar-free

 

HOW TO PREPARE

 

In a large bowl combine the sweetener, salt, and almond flour. Combine well and use a food processor for blending. Add butter slices on top and mix well until you have a homogenous substance. Then, spread the mixture into a 9x9inch pan and bake for 12 minutes on preheat oven to 325F( you can know that the baking is almost done when edges start turning golden). Set aside and prepare the filling.

 

Melt the rest of the butter in a medium sauce pan on low heat. Add the powdered sweetener and Yacon syrup and blend well until everything is nicely combined. After removing from heat add the eggs, the salt, the vanilla extract, and cream. Whisk well until everything blends. 

 

 

Add the chocolate chips and the pecans to the crust. Then, pour the filling over top and make sure that you have equally covered each spot of the crust. Bake for another 20 to 25 minutes and let it cool for at least thirty minutes before serving. Bon appetite!
