Keto Low Carb Gravy Recipe

Many of our keto beginners struggle to find a good gravy that is low in carbs and keto-friendly. However, this is the ultimate low carb gravy that is not hard to prepare and all of the ingredients are healthy and useful for your keto diet.

KETO LOW CARB GRAVY

The traditional gravy originates from the United Kingdom and Ireland. Back in the day, it was served together with their traditional Sunday Roast and quickly spread in popularity throughout all of the countries in the commonwealth. Today it is still popular addition to many main dishes, especially with meat-based specialties. This ultimate keto gravy is low in carb and good for your keto diet. Let's check the ingredients and preparation process.

INGREDIENTS

  • 2 tbsp ghee or duck fat (30 g/ 1.1 oz)
  • 1 medium white onion (110 g/ 3.9 oz)
  • 2 cloves garlic
  • 1 tbsp balsamic vinegar (15 ml)
  • 1 tbsp Dijon mustard (you can make your own)
  • 1 tbsp freshly chopped sage or 1 tsp dried sage or any herbs of choice
  • 1 tsp lemon zest, use organic unwaxed lemons
  • 2 tbsp fresh lemon juice
  • 1/2 cup dried porcini mushrooms (15 g/ 0.5 oz)
  • 1/4 cup heavy whipping cream or coconut milk (60 ml/ 2 fl oz)
  • 2 cups bone broth or chicken stock or vegetable stock (480 ml/ 16 fl oz) - you can make your own bone broth
  • 1/2 cup water to soak the mushrooms (60 ml / 2 fl oz)
  • sea salt and ground pepper, to taste

HOW TO PREPARE

Soak the porcini mushrooms in clean water for about 30 minutes. Meanwhile, prepare the onions and garlic for cooking, zest the lemon and chop the sage.

Preheat a cooking pan greased with ghee and add the garlic and onion. Stir nicely to avoid overcooking or burning. Cook until the onion turns light brown to golden. During this process add the lemon zest and sage while stirring carefully.

Add the rest of the ingredients: lemon juice, bone broth and the soaked porcini mushrooms. The temperature in the pan will be reduced by adding the new ingredients. Continue stirring for a while and add balsamic vinegar and mustard. Then, you should wait for the mixture to boil. 

After the boiling point, you must simmer on low heat. This is very important because you don't want the gravy to be too watery or thin. Make sure that the amount of liquid is reduced by about 50%.

Once this process is over, add the cream and cook for about 5 more minutes to blend the cream with the mixture well. After this is complete, you can add salt, pepper, or some of your favorite seasonings.

Pour the gravy in a jar or medium-sized bowl and mix for a while (this is optional if you want thicker and more homogenous gravy). This is the final step- you can serve your keto gravy.
