Keto Pecan Pie Tarts

KETO PECAN PIE TARTS

As usual, you need to know that his dessert is based on the traditional pecan pie, but it’s completely grain and gluten-free. Of course, these pecan pie tarts are completely keto-friendly and good for your diet.

Make this interesting recipe to impress both the adults and the kids. The authentic pecan pie taste is something that will bring good memories and, at the same time, these tarts are good crowd-pleaser. On the other hand, you can serve them as a regular dessert in a dish in combination with icecream or other creams or frostings (cinnamon ice cream is just amazing together with the pecan pie tarts).

INGREDIENTS

Crust:

  • 1 â…“ cups almond flour
  • 1 ½ tsp coconut flour
  • 2 tbsp cold butter
  • 1 ½ tsp cold water

Filling:

  • 6 tbsp softened butter
  • ¾ cup Trim Healthy Mama Gentle Sweet or my sweetener
  • 1 tsp vanilla
  • 1 tsp molasses ***
  • 1 oz heavy cream
  • 1 egg
  • 1 cup pecans

HOW TO PREPARE

First, prepare the crust mixture. Blend coconut flour, almond flour, and butter in a food processor. Add water until everything is mixed well. Once you have a dough divide it into 8 pieces.

Preheat the oven to 350F and grease muffin tin with butter or shortening. Press the dough pieces into the bottom and halfway up the sized in the muffin tin cups, and prick the bottoms with a fork. Bake the muffin crusts for 10 minutes.

The next step is to prepare the filling.  In a medium bowl add  6 tbs butter and sweetener while mixing with an electric mixer. Meanwhile, add molasses, heavy cream, egg, and vanilla- mix nicely until you have a smooth and well-combined mixture. Add the pecans to the mixture.

Fill the baked crusts shells with the mixture and bake for 20 more minutes until they turn golden brown and solid. When baked, set aside in the fridge to cool and your keto pecan pie tarts are ready for consumption.
