Avocado Keto Frittata With Cotija And Mozzarella Cheese

Avocado is among the most popular keto fruits and there is a good reason behind it. This exotic fruit is full of heart-healthy fats and low in carbs. Also, avocados can have multiple purposes in different kinds of foods because of their special taste. They are compatible with both salty and sweet foods. The avocado keto frittata with cotija and mozzarella is just another great example of this claim. At the same time, this recipe is very rich in fats and represents a creative combination of different tastes and smells.
AVOCADO KETO FRITTATA WITH COTIJA AND MOZZARELLA CHEESE
As you can see, this recipe is based on 2 very important kinds of cheese that are found in many different keto recipes. These two brands of cheese differ in their taste and smell which makes this recipe very amusing for those who love cheese-based recipes. In this recipe, there are other ingredients included, as well, rich both in fats and proteins. That makes this recipe a perfect option for breakfast, but it's also a good choice for lunch or dinner.
INGREDIENTS
- 2 oz. crumbled Cotija Cheese(see notes)
- 1/2 cup grated Mozarella
- 1/4 cup sliced green onion
- 8 eggs, beaten well
- 2 T milk or half and half (optional)
- 2 tsp. olive oil (more or less, depending on your pan)
- 1/2 tsp. Spike Seasoning (or use any all-purpose seasoning that’s good on eggs)
- fresh-ground black pepper to taste
- 1 large avocado, sliced lengthwise
HOW TO PREPARE
Slice the green onion, beat the eggs with milk well, and prepare the cheese. You can use pre-grated mozzarella or grate it yourself. The cotija cheese must be crumbled. With your ingredients ready, you can continue to the next step.
Use medium oven-proof frying pan over low heat and add oil. When the pan is hot, add the egg mixture together with the seasonings and black pepper and cook for about 5-10 minutes. Then, add the mozzarella and sliced green onion and cook for additional 5 minutes (do not let eggs overcook).
Lay the avocado slices on top and sprinkle with cotija cheese. Cook for 3 additional minutes with the pan covered with its lid. After this, remove the lid and put the frittata under the broiler to cook the frittata for additional 2 minutes. You know that the recipe is done well when the eggs are firm and cheese is nicely melted on top ( turning light brown). During this process, you must be extra careful not to overcook the frittata. This frittata should be served hot.
