Peppers And Sausage Spaghetti Squash Keto Casserole

In fact, casseroles don't really enjoy a very good reputation among the people in keto because the traditional casseroles are full of veggies and, honestly, not so useful for the process of ketosis. Ketosis is the most important goal of every person who starts a ketogenic diet. This process requires a lot of fat intake to switch the body fuel from glucose to ketones. This means that all of the recipes for your keto meal plan should be low in carbs (to prevent glucose production) and rich in fat. Of course, veggies are crucial because they are full of vitamins and minerals, as well as proteins. PEPPERS AND SAUSAGE SPAGHETTI SQUASH CASSEROLE

This casserole can be a true refreshment in your keto meal plan. Also, unlike most casserole versions, this one is very popular among children too. The peppers and sausage spaghetti squash casserole is great to share with your family and friends, let them try something new and original. On the other hand, this casserole is as comforting as any other casserole, but it's an awesome choice for those in keto.

 

INGREDIENTS

  • 1 medium spaghetti squash
  • 1 pound Italian seasoned ground sausage
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 2 cups pasta sauce (I use canned, you can use homemade!)
  • 3 eggs, whisked
  • 2 cups mozzarella cheese
  • Fresh basil, salt & pepper, to taste

HOW TO PREPARE

Cook the spaghetti squash first. Scoop out the seeds and place it in your microwave, but first add about 2 inches of water. Microwave on max power for about 5-10 minutes. Check the spaghetti squash to know if it is ready ( it should be really soft). Remove from microwave and cool, then drain any extra liquid in the bowl.

Cook the ground sausage well and in the same pan add the peppers and onion until they are soft. Stir the sausage with soft onions and peppers. 

Prepare the casserole dish with a non-stick cooking spar. Then, mix everything together including the squash and the pasta sauce, and pour the homogenous mixture inside the casserole dish. (it is recommended to mix the eggs and seasoning in a bowl instead of directly adding them to the casserole dish). 

Sprinkle cheese on top and bake on a preheat oven to 350F for about 45 minutes to 1 hour until you see a nice crust formed on top.
