CHEESY BROCCOLI KETO BALLS

One of those recipes is the Cheesy Broccoli Keto Balls. As we already said, this recipe is not good for those in keto only, but it's a great option to enrich your dinner menu for your family and friends. Of course, you can serve these balls as delightful cheesy snacks because they are great with beer or other drinks.

INGREDIENTS
- 1 1/2 heaping cups fresh broccoli florets
- 1 cup shredded Colby cheese
- 1 cup shredded cheddar cheese
- 4 ounces Velveeta, cut into small chunks
- 1/2 teaspoon crushed red pepper flakes
- 2 1/4 cups Panko crumbs, divided
- 1 egg, lightly beaten
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten
- Vegetable or Canola oil
HOW TO PREPARE
The broccoli needs to be boiled, but steam is the perfect option. Steam the broccoli and let cool for a while, then chop the broccoli into smaller pieces.
Now it's time to prepare the mixture. In a large bowl add the chopped broccoli, cheese, red pepper flakes, 1 egg, and 1/4 cup panko crumbs. Mix everything well and make sure that the combination is equally combined.
When your mixture is ready, use your hands to shape small balls from the mixture. You should have around 10-15 balls depending on the size of each ball.
Refrigerate the balls for 30 minutes. While the balls are in the refrigerator place flour in another bowl. Add 2 lightly beaten eggs to the bowl together with 1 tablespoon water and mix again. You need a good mixture so you can dip the balls nicely before frying. Put the rest of the Panko crumbs in a third bowl also to dip the balls.
Heat oil in a heavy pot over 375F heat. Dip every ball in the egg mixture and coat with Panko crumbs. Fry the balls normally. They are ready when their outside core turns golden brown. Drain them on a plate before serving.
