INGREDIENTS
BREADSTICKS DOUGH
- 1 1/2 cups part skim low moisture shredded mozzarella cheese
- 1 oz cream cheese
- 1/2 cup almond flour
- 3 tbsp coconut flour
- 1 large egg
TOPPINGS
- 1/2 cup part skim low moisture shredded mozzarella cheese
- 1/3 cup shredded parmesan cheese
- 1 tsp finely chopped parsley
HOW TO PREPARE
Melt mozzarella and cream cheese in a large microwave-safe bowl. Do it in 30 seconds intervals at full power capacity. After each interval, make sure that you will stir the cheese and cream until they are completely melted and turned into a homogenous substance. ATTENTION: Do not try to melt the cheese at once. The microwave at full power might overcook the cheese and ruin your plan.
Once your cheese ball is complete, add it to a food processor with dough blade attachment and combine the substance with almond flour, coconut flour, and egg. Use the food processor until the dough is uniform and sticky. After this process is finished, your dough is finally ready. Let it cool for a while (to let it become less sticky) and then move the dough carefully onto a baking sheet. You can do this by using parchment paper to make a nice piece 1/4 inch thick.
Before baking, spread 1/4 cup of mozzarella cheese over the dough and leaving a 1/2 inch perimeter. The last phase is baking. Bake it until the edges of the dough are puffy, crispy, and golden (brown). This should take about 5-6 minutes. If you want an even better mouthwatering effect, you can add another round of mozzarella cheese and parmesan cheese and bake it for another 2-3 minutes. Before serving garnish the breadsticks with parsley and cut the bread in the way you like (larger or smaller breadsticks).
