Keto Cauliflower Muffins With Cheese Recipe

Cauliflower serves various purposes in any specific keto meal plan. This veggie rises in popularity not because of its great nutrient values, but also because of its practical usage in many keto recipes. Cauliflower should definitely become your cruciferous veggie of choice during your keto diet.

Each ketogenic diet promotes the intake of vegetables and other foods rich in vitamins and minerals. This is extremely important because the high intake of fat might directly affect the liver. By balanced intake of fats, proteins and vitamins you make sure that your body will stay constantly healthy. Cauliflower is definitely a great choice for keto because it contains vitamins C, K and Iron, while its carb ratio, is 1.5g per cup. The cauliflower keto recipes are also awesome.

 

KETO CAULIFLOWER MUFFINS WITH CHEESE RECIPE

This keto recipe is based on cauliflower. It’s very delicious and a good crowd pleaser. Also, the process of cooking is not difficult which makes it an ideal recipe for the busy holiday season.

 

INGREDIENTS

 

  • 3 cups finely chopped raw cauliflower florets approximately 1/2 a head of cauliflower
  • 2 large eggs
  • 1 cup shredded cheddar cheese divided
  • 1/4 cup  almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp dry Italian seasoning herb blend
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder

 

HOW TO PREPARE

 

Blend together cauliflower, cheese, almond flour, Italian seasoning, garlic powder, onion powder, and eggs. Mix everything well until you have a homogenous and smooth mixture.

Preheat the oven to 375F and place the muffin/cupcake pan with cupcake liners or parchment paper(shaped). Scoop from the previously prepared mixture and add an equal amount to each of the liners (2/3 full).  After this, your muffins are ready for baking.

 

Bake for about 20-25 minutes. In the last 5 minutes, you can sprinkle parmesan cheese. Bake well until your cauliflower muffins are solid and dry to the touch. Before serving, you can garnish with parsley or some other seasoning according to your own taste.
