Keto Chicken Avocado Salad

The low carb keto chicken avocado salad is nothing but a carefully 'forged' combination of vitamins, fats, minerals, proteins, and amino acids. This recipe is a good crowd-pleaser and you can feel free to serve it in front of your family or friends. At the same time, this dish is great if you want a solid replacement for any snack (especially as after exercise snack) in your personal keto meal plan.
KETO CHICKEN AVOCADO SALAD
People in ketosis often switch to avocado-based products and recipes to improve their keto progress. Of course, this is expected for avocado's rich and healthy benefits. Those who exercise regularly and want to lose weight faster always use keto smoothies and other combos to empower their performance.
However, the recipe that we share in this article is good for everybody, even for those who are not connected with ketogenic diet in any way in particular. This recipe is easy to make and definitely worth trying.
INGREDIENTS
- 2 cups poached chicken finely diced (10 oz)
- 1 medium Hass Avocado, mashed
- 1/3 cup celery, finely diced (1 large rib)
- 2 tbsp red onion or scallion, minced
- 2 tbsp cilantro, finely chopped
- 2 tbsp avocado oil (or your favorite)
- 1 tbsp fresh lemon juice (or lime juice)
- salt and pepper to taste
HOW TO PREPARE
The avocado must be cut into with a chef's knife until the blade is able to remove the pit. Cut the avocado in half and remove the pit. Make sure you have good two avocado halves with the pit removed to be able to scoop out the avocado flesh with a spoon. Place the scooped avocado flesh in a separate bowl.
Add onion, cilantro, and celery in a medium bowl. Meanwhile, dice the chicken and add it to the mixture. Then, mash the avocado in a separate bowl with a fork until you have a smooth and thick substance.
Add the avocado to the chicken mixture and stir everything nicely until you have a homogenous substance.
Before serving prepare a medium bowl with lettuce leaves and pour the avocado substance over. You can mix if you like and you can add other seasonings if you want to (such as oregano, dried parsley, soy sauce, etc.)
