Keto Grilled Avocado Salsa Chicken

The preparation process is actually simple and you won't need much time in the kitchen for cooking.

 

KETO GRILLED AVOCADO SALSA CHICKEN

 

 

Before cooking, make sure that you have quality products, especially when it comes to the chicken breasts. This recipe requires the avocado salsa to be prepared more than 2 hours before cooking the meat. So, first, start with the salsa and refrigerate it. Then, proceed with the chicken breasts and sauce. 

 

INGREDIENTS

 

  • 1 1/2 pounds boneless skinless chicken breasts or 4 chicken breasts

 

For the Marinade

 

  • 2 garlic cloves finely minced
  • 3 tablespoons olive oil
  • ¼ cup cilantro chopped
  • Juice of 1 lime
  • 1/2 tsp. 
  • ½ tsp 
  • ½ tsp salt or to taste
  • ¼ tsp black pepper

 

Avocado Salsa

  • 2 avocados diced
  • 2 small (or 1 large tomato) chopped
  • ¼ cup red onion chopped
  • 1 jalapeno de-seeded and chopped (optional)
  • 1/4 cup cilantro finely chopped
  • Juice of 1 lime
  • fresh cracked pepper & salt to taste

 

HOW TO PREPARE

 

For the salsa, just add all ingredients to a large bowl, mix well and cover with plastic wrap. Leave the salsa bowl in the fridge until you start grilling the meat.

 

The second step is the marinade. Whisk all ingredients in one separate bowl and mix. 

 

The breasts should be pounded nicely to be thick and evenly sized. Then, coat each chicken breast in the marinade well. Optionally, you can put the chicken in the marinade 12 hours prior to cooking. However, you can do it just half an hour before grilling. Both options are acceptable, it's up to your own taste and methods.

 

Grill the coated chicken breasts in a large skillet for 5-6 minutes per side. Once the chicken is ready, pour the salsa on top and serve immediately.
