INGREDIENTS
- 3 cups part skim low moisture shredded mozzarella cheese
- 2 oz cream cheese
- 3 large eggs one egg is reserved for egg wash
- 2 cups superfine almond flour
- 1 tbsp baking powder
- 1 tbsp coarse salt
HOW TO PREPARE
Prepare a baking sheet with parchment paper and preheat the oven to 400F. Meanwhile, start preparing the dough mixture. Blend together almond flour and baking flour. After this is done, prepare the other part of the dough mixture. Melt the cheeses in the microwave at full power in small intervals of aprx. 30 seconds. Make sure that the cheese is completely melted and stir after each interval to prevent overcooking.
The next step is to combine the dough substances. Add the cheese and 2 eggs together with the almond flour mixture into the food processor with the dough blade attachment. Blend the ingredients well until you have a homogenous and solid substance. The dough should be sticky and oily.
Divide the dough into 8 equal parts. Before doing it, coat your hands with oil and wrap your pastry board with plastic wrap. Each dough should be rolled into long ropes about 1 inch thick. Then, cut the ropes with a sharp knife into 3/4 inch wide pieces. Approximately you should have about 74 bites.
Prepare the bites for baking by brushing the surface of each bite with a whisked egg. Use the last egg to complete this step. Sprinkle with salt before baking the bites for about 12 minutes at 400F. After the pretzels have golden to light brown color, set your oven to low broil, and cook for another 2 minutes. This will make the exterior of each bite crispy and will keep the inside soft. However, during this process, you must carefully observe the pretzels to prevent burning or overcooking.
