The keto spinach artichoke dip is easy to make, but there are a couple of rules that you must follow and each step in preparing this recipe is interesting and amusing (at least for us).

KETO SPINACH AND ARTICHOKE DIP RECIPE

INGREDIENTS

  • 4 oz Spinach (chopped)
  • 4 oz Cream cheese
  • 2 tbsp Mayonnaise
  • 2 tbsp Sour cream (or additional 2 tbsp mayo)
  • 1/4 cup Grated parmesan cheese
  • 1 (14.5 oz) can Artichoke hearts in water (drained, chopped, and squeezed to release extra moisture)
  • 4 cloves Garlic (minced)
  • 1/4 tsp Black pepper
  • 2/3 cup Mozzarella cheese (shredded, divided into 2 parts)

HOW TO PREPARE

Cook the chopped spinach on a greased pan over medium heat. While cooking, stir from time to time until the spinach turns bright green and is wilted. Cool the spinach (if you want to haste the procedure put the bowl inside a larger bowl filled with ice).

Heat the cream cheese in the microwave or cook it on low heat. When the cream cheese is melted add the mayonnaise, grated parmesan, sour cream, artichoke hearts, minced garlic, half of the shredded mozzarella, and black pepper. Stir until you have a well-blended homogenous substance.

When the cooling of the spinach is over, gather the prepared spinach into a ball and squeeze well. Squeeze it as long as much as you think is enough and try to drain water as much as possible.

Once the spinach is fully drained add it to the previously prepared dip mixture. Then, put the dip inside a large ramekin or ceramic appetizer dish. Smooth the top with a spatula and sprinkle the rest of the mozzarella.

The last step is baking. Bake the dip for about 30 minutes until the dip is bubbly and hot. This dip should be served warm and you can use keto-friendly chips, pretzels, or crackers to enjoy this cheesy experience.
