LOW CARB SALTED CARAMEL PEANUT BARK
The key to this recipe is the brown sugar and sea salt. Sounds like a very interesting combination, but the best thing is that these two ingredients are healthy and good for your keto diet. Make sure that before making the salted caramel peanut bark you buy the right products. Read the declaration of each product and make sure that you won’t buy products with hidden carbs to keep the glucose levels to a minimum.
INGREDIENTS
- 4 tbsp (2oz/60g) grass-fed butter (unsalted)
- 2 tbsp (1oz/28g) pure brown erythritol or 1.5 tbsp (20g) Golden Monk Fruit Sweetener or 1:1 brown erythritol blend)
- 2 oz (2oz/60g) peanuts
- 2 tbsp (1oz/30g) all-natural peanut butter (no sugar added)
- flakey sea salt
HOW TO PREPARE
Melt the butter on low heat. Use a small non-sticking pot (this is important to prevent sticking). Add all of the ingredients (except the flakey sea salt) and mix well until you have a homogenous substance.
Use a suitable tray to pour the mixture into. Also, spread parchment paper before pouring the mixture. Use a nice tray that will prevent the mixture from spreading too much.
The mixture should be set in the freezer for a couple of hours. Make sure that the butter is completely solid and frozen. In the last phase, sprinkle the sea salt on the top of the solid keto caramel bark and cut it into pieces according to your own measure.
You can use keto-friendly chocolate or syrup to pour on top before serving (optional). Anyways, these bark chunks are delicious even when served as they are.
