INGREDIENTS
- 8 to 9 lb prime rib (4 to 6 ribs)
- 6 to 8 garlic cloves, thinly sliced
- 1 cup sea salt
- 3/4 cup olive oil
- 3/4 cup fresh herbs (1/4 cup each of oregano, rosemary, and thyme)
- 3 tbsp pepper
HOW TO PREPARE
1 to 2 Days Prior to Serving
Make a marinade of a well-blended mixture of olive oil, herbs, and pepper. Slit the prime rib roast with small cuts, large enough to insert sliced garlic. Do this evenly on the entire surface to be able to spread the garlic and marinade equally all over the rib. Rub the olive oil mixture and cover the entire roast in kosher salt. Then, wrap the roast in foil and put it in the fridge for 1-2 days before roasting.
Day of roasting
Preheat oven to 500F and after removing the foil (1 hour prior to roasting) put the prime rib inside the oven on a roasting pan. Once you put the prime rib inside, set the oven to 300F immediately. Roast for about 17-20 minutes until the temperature of the roast reaches 125-130F in the center.
Once the roasting is over, remove the rib, tent with foil, and set aside. Wait for about 15-30 minutes and remove the salt crust and ribs before serving. Cut the meat into thick slices and serve it with horseradish sauce (recommended) or other syrups and seasonings according to your taste.
