2 Ingredient Simple Keto Pasta Recipe

2 INGREDIENT SIMPLE KETO PASTA RECIPE
This pasta is composed of 2 ingredients only. It quite differs from the regular wheat flour pasta, but it's cheesier and stronger in taste. The preparation is not easy if you don't have experience with doughs, but the entire process of cooking is very simple, in fact.
INGREDIENTS
- 1 cup shredded part-skim low moisture mozzarella cheese
- 1 large egg yolk
HOW TO PREPARE
Cook the mozzarella cheese into a microwave and stir well. Your goal is to completely melt the cheese and this takes about 1-2 minutes, but make sure you stir in 30-second intervals to prevent overcooking. When done, set aside to cool.
Then, add the egg yolk to the melted cheese. Stir and mix nicely until you have a homogenous dough substance.
Place the dough on your cooking surface and use a rolling pin to equally roll the dough. Your dough should be 1/8 inch thick. Use parchment paper during the process to prevent sticking.
When you have this process complete, remove the parchment paper, cut the dough into 1/2 inch wide strips, and refrigerate the pasta for more than 6 hours or leave it in the fridge overnight.
The last step is to cook the pasta. Boil water in a cooking pot and after the boiling point, add the pasta. Cook the pasta strips for around 40 seconds to 1 minute. You should be extra careful with this pasta not to overcook, so you shouldn't keep the pasta boiling for more than 1 minute. Check every 20 seconds to make sure that your pasta is properly cooked.
Remove the pasta and cool it with cold water. There might be strands stick together. Separate them nicely and set the pasta aside to cool. Then, you can serve it in a plate. Add any pasta sauce according to your taste. Bon appetite!
