This chicken recipe is very low in carbs and compatible with any ketogenic meal plan. Also, if you have more experience in the kitchen, you can experiment with this particular recipe and enrich it in your own way.

INGREDIENTS

  • 12 oz chicken breast cut into 1-inch cubes
  • 1/2 cup + 1 tbsp coconut flour
  • 1 large egg
  • 1 tbsp heavy cream
  • oil for frying
  • 1 green scallion thinly sliced

SAUCE INGREDIENTS

  • 2 tbsp water
  • 1/4 cup + 2 tbsp fresh squeezed orange juice (approximately one orange)
  • 1/2 tbsp orange zest
  • 1/4 cup erythritol granular
  • 2 1/2 tbsp white vinegar
  • 1/8 cup low sodium soy sauce
  • 1 clove garlic minced
  • 1/4 tsp ginger minced
  • 1/2 tsp sriracha
  • 1 tsp sugar free ketchup
  • 1/2 tsp xanthan gum

HOW TO PREPARE

To be honest, this is not a simple recipe, especially for beginners. Even though most of our recipes are beginner-friendly, this one requires more attention and skill. To begin with, the process, start with preparing a coconut flour bowl with another bowl of whisked egg with heavy cream.

Then, dip each chicken piece in the egg wash and carefully coat each piece of chicken without any excess egg wash on the surface. This is important because excess moisture will cause the breading to clump and you won't be able to finish the recipe.

After this step is finished, roll the chicken in the coconut flour nicely until each piece is fully coated.

The next step is frying. Add 1 inch of oil into a frying pot. When the oil is heated above 350F add the breaded chicken pieces. Cook the chicken for a few minutes until each piece is golden brown in color and crispy in texture. Put the chicken pieces onto a paper towel-lined sheet or bowl.

During the frying of the chicken pieces, it is recommended to prepare the sauce. In a small saucepan add all sauce ingredients from the list, except for the xanthan gum. Cook for a couple of minutes until the sauce is homogenous and nice in taste (according to your own wish) and sprinkle the xantham gum. Continue with cooking for just a while, until the sauce is completely well mixed and simmering. Be not afraid- the liquid form will thicken when chilled. However, the sauce must not be too thick nor too liquid, so you must serve the sauce right after you finish with the cooking.

Do this fast and put the chicken onto your serving plates and quickly spoon the sauce all over the chicken. You can garnish with something that you find compatible, but scallions are recommended. Bon appetite!
