Keto Broccoli & Cheddar Cream Soup

During this winter season, we all love to eat something warm and delicious. This keto broccoli cheddar soup recipe is very low in carbs and a creamy, tasty experience. This thick soup is unlike anything you've ever tried before and if you love cream soups, this is a must for you. At the same time, this soup is very rich in fat, 24g of fat per single serving, which means this recipe can be part of your keto meal plan for any part of the day.

KETO BROCCOLI CHEDDAR SOUP RECIPE

To be honest, the people in the keto community often struggle to find good keto snacks or crowdpleasers. Most of us are following their usual keto meal plan, but you can always add something new and refreshing, especially during the fall/winter season when we need more vitamins and minerals than usual. Brocolli is an awesome veggie that needs to be included in your keto meal plan. It is very healthy and satisfies the keto nutrient levels. Broccoli is the main ingredient in this recipe, let's check the rest:

INGREDIENTS

  • 2 tablespoons Butter
  • 1/ 8 Cup White Onion
  • 1/2 teaspoon Garlic, finely minced
  • 2 Cups Chicken Broth
  • Salt and Pepper, to taste
  • 1 Cup Broccoli, chopped into bite size pieces
  • 1 Tablespoon Cream Cheese
  • 1/4 Cup Heavy Whipping Cream
  • 1 Cup Cheddar Cheese; shredded
  • 2 Slices Bacon; Cooked and Crumbled (Optional, if you want a stronger meaty taste)
  • 1/2 teaspoon xanthan gum (optional, if you want  thicker soup)

HOW TO PREPARE

Preheat a large pot and add butter together with onion and garlic. Cook on medium heat until the onions are softened. Then, add broth and broccoli to the pot. Cook as long as the broccoli becomes soft and tender. Meanwhile, you can add your favorite seasoning, salt, and pepper.

Cream cheese needs to be placed in a small bowl and heat in the microwave for about 30 seconds. 

When the broccoli soup is close to its boiling point, add the cream cheese and whipping cream. Stir nice and strong until the substance blends well. Turn off heat and quickly stir in cheddar cheese. If you want the soup to be thicker, add xanthan gum (optional).

Now your soup is ready to be served. Serve it hot and add bacon (optional) or other seasonings on top (such as raw pepper or lemon juice).
